Chickpea & Sweet Potato Veggie Burgers with Creamy Golden Dressing

What’s for dinner tonight? How about these absolutely delicious veggie burgers? They are packed with protein, full of flavor, juicy and with the same mouthfeel as regular burgers. That is thanks to the many ingredients contained in the recipe. Beyond the flavor, they bring a wonderful texture to the mix. Perfect for anybody appreciating the pleasure of biting into a burger.

By adding Golden Chlorella to the burger and the dressing, the protein content is boosted. That helps feeling full for longer and not craving snacks between meals. Besides, the creamy Golden Dressing is a real eye catcher!

The preparation time for this recipe is about 20 minutes, the actual cooking time 35 minutes. And this is the list of ingredients you will need to make 6 – 8 Chickpea & Sweet Potato Veggie Burgers, depending on how large you form them:

  • Handful of coriander leaves
  • 3 garlic cloves chopped
  • 1cm piece of ginger chopped
  • 1/2 tsp. chopped and deseeded red chili
  • 2 spring onions, chopped
  • 1tsp ground cumin
  • 1tbsp lemon juice
  • 2 tbsp. tamari soy sauce
  • 2 tbsp. olive oil
  • Black pepper, few turns
  • 2tbsp Golden Chlorella
  • 2tbsp flaxseed soaked in 3tbsp water
  • 150g grated raw sweet potato
  • 60g roasted and salted cashew nuts
  • 1 x 400g can chickpeas drained
  • 180g gluten-free oats

For the creamy Golden Dressing you will need:

  • 115g mayonnaise or vegan mayonnaise
  • 1tbsp Golden Chlorella
  • 50g tomato ketchup
  • 2tbsp apple cider vinegar
  • 1/4 tsp. garlic salt
  • Black pepper to taste

To serve: Burger buns, spinach, tomato, and slices of red onion

Instructions

Place all the ingredients except the grated sweet potato, chickpeas, nuts and oats in a food processor and blend until smooth. Add the remaining ingredients and process briefly to combine. Keep a little texture. Spoon the mixture into a bowl and chill for 30 minutes. Preheat the oven to 190 °C, gas mark 5.

Shape the mixture into 6 – 8 burgers. Place the burgers onto a greased baking tray. Bake for 20 minutes, then gently flip the burgers and bake for another 15 minutes until golden on both sides.

Meanwhile, make the dressing by mixing all the ingredients together in a small bowl. Season to taste. Slice the burger buns and spread a little dressing on the bottom of the roll, top with a burger followed by lettuce and tomato then drizzle over some extra dressing. Place the burger bun on top to serve. Bon appetit!
