Ingredients
- 2 cups mung beans (soak in a bowl of water overnight, then drain and rinse)
- 1 teaspoon Golden Bean
- ¼ olive oil
- 1 minced onion
- 3 cloves of garlic
- 2 tablespoons grated fresh ginger
- 2 potatoes cut into cubes (you can leave the skin on)
- 1 tablespoon of turmeric
- 1 teaspoon cayenne pepper
- 1 tablespoon of tomato puree
- 4 cups of boiling water
- 1 bunch minced kale
- 1 handful of fresh coriander
- Salt
Preparation
In a large skillet, put the mung beans and cover with water. Bring to a boil and remove the skins if necessary. Simmer for 15 minutes until the water has evaporated and the beans are tender. Keep simmering over low heat. In a pan, add the oil, garlic, ginger and onion. Once the onion is translucent, add the potatoes, turmeric powder, cayenne pepper, tomatoes and tomato puree. Cook 5 minutes while stirring. Add the Mung beans and cook for another 5 minutes so that everything mixes well. Add the 4 cups of boiling water, then the kale and keep stirring for 1-2 minutes. Season with salt and pepper and semi-cover. Let simmer for 15-20 minutes. Add 1-2 teaspoons of Golden Bean to your dish to supercharge it with mung bean protein, vitamins and minerals. Serve hot and accompanied with a piece of homemade bread. Enjoy your meal ! (Photo:  kneadtocook.com)
Alver Golden Bean: neutral in taste and healthy
The mung bean is interesting as a plant protein supplement because it is easy to digest and can be used for many familiar foods for which meat is traditionally the basis. In addition, it is characterized by long storage life. However, as described above, the use of mung beans requires some preparation: the dried, whole beans need to be soaked over night and then simmered for about 45 minutes before they can be used to prepare a healthy, digest, protein-rich salad, soup, curry, dip or humus.
Alver specializes in the production of protein-rich, vegan foods and protein isolates, including mung bean. Already fermented, washed, dried and offered in powder form, Golden Bean is the perfect ingredient for cooking, roasting, baking, mixing and shaking at home.
