Ingredients
- 1.5 cups mung beans (soaked over night, drained)
- 2 tbsp. Alver Golden Bean Protein
- 1 cup fresh parsley
- 1 cup chopped red onion
- 6 garlic cloves roughly chopped
- 4 tsp. ground cumin
- 2 tsp. ground turmeric
- 1 tsp. ground coriander
- 2 lemons, pressed for juice
Instructions
Put a spoonful of Golden Bean into a little water and start dissolving it by stirring. Little by little, add more water and keep stirring. One cup of water gives you a nice creamy thick paste. Place the mung bean protein paste in a blender together with all the other ingredients.
Blend until the mixture is coarse. Season to taste. Transfer the mixture into a large bowl and cover it with a lit. Put it in the refrigerator for at least 30 minutes.
Preheat the oven to 200 °C. Grease a baking sheet with oil or line it with parchment paper. Shape the mung bean mixture into 16 even-sized balls and place them on the baking sheet. Brush the top and bottom of the falafel with a little bit of olive oil and sprinkle with coarse sea salt.
Bake for 20-25 minutes. Place your mung bean falafel on a bed of fresh salad. Serve with your favorite dip.
