The recipe we want to share with you today is for a Pear and Rhubarb Protein Smoothie and serves 2:
- 2 pears, peeled, cored and cut into chunks
- 3/4 cup rhubarb syrup
- 1/2 cup rhubarb pulp from making the syrup
- 1 cup almond milk or other non-dairy milk
- 2-3 tablespoons soy yogurt
- 1/4 teaspoon ground ginger
To make the rhubarb syrup:
- 1 cup water
- 1 teaspoons maple syrup
- 4 cups rhubarb, cleaned and cut into chunks
Trim and dice rhubarb and place in a medium saucepan on the stove. Add the maple syrup and water and bring to boil. Then turn the heat down to a simmer. Be sure to stir occasionally and more frequently towards the end to ensure that it doesn’t burn. Cook the rhubarb until it breaks apart. Use the back of a large spoon or fork to mash the remaining chunks. Allow to cool then strain through a cheesecloth. Sweeten further to taste if desired. Keep 1/2 cup of the rhubarb pulp for the smoothie. Pour the strained syrup into a bottle with a cap or lid. Keep extra rhubarb syrup refrigerated.
Side note: Rhubarb syrup is great not only for making smoothies, but also for spritzers, as a spread on toast, a mix-in for your non-dairy yogurt, or as a sauce for pancakes. So keep any leftovers in the fridge or freeze in ice cube trays for later use!
To make the smoothie:
Put all the ingredients in a blender. Add 1-2 spoonfuls of Alver Vegan Protein (Note: if you opt for Golden Chlorella, the recommended daily dosis per adult is 10g not more! Chlorella has cleansing properties and so it is important to slowly prepare the body to that effect, start with 5g over 10 days, then progressively increase to 10g)
Mix all the ingredients together in a blender. Pour into two glasses and serve.

Did you know, rhubarb is actually a vegetable! It is fantastic to freeze and keep for use as and when required. So, if you can’t find fresh rhubarb, just opt for frozen and substitute 1:1. In spring, it adds a bit of zing to your vitamin smoothies!
